Ingredients

  • 6 medium beets, raw and grated

  • 1 cup crumbled feta cheese

  • ½ cup green olives, pitted and sliced

  • ⅓ cup dried cranberries

  • ⅓ cup chopped walnuts

  • Fresh parsley, chopped (to taste)

  • Fresh cilantro, chopped (to taste)

  • ⅓ cup olive oil

  • ¼ cup apple cider vinegar

  • Salt and pepper to taste

Instructions

  1. Start by grating the beets into a large bowl.

  2. Add the crumbled feta cheese, sliced green olives, dried cranberries, and chopped walnuts.

  3. In a small bowl, mix the olive oil and apple cider vinegar. Season with salt and pepper to taste.

  4. Pour the dressing over the beet salad and toss well to coat all the ingredients.

  5. Incorporate the chopped parsley and cilantro into the beet mixture. Toss again to combine.

  6. Refrigerate the salad for about 10 minutes before serving to allow the flavors to meld.


Note: This salad is delicious as a side dish. For an extra touch, add a bit of lemon zest or some sunflower seeds for extra crunch! If you want a more filling salad, you can add chickpeas.
