About the Recipe

Celeriac, with its rough skin and crunchy flesh, is a versatile root vegetable that adds a unique texture to dishes. Our recipe for celeriac remoulade showcases its fresh and nutty flavor, enhanced by the mustard and lemon sauce. This quick and easy-to-prepare dish, perfect as an appetizer or side dish, will appeal to fans of light, flavorful cuisine.

Ingredients

  • 1 medium celeriac, peeled and julienned

  • 1 tablespoon lemon juice

  • 1/2 cup mayonnaise

  • 1 tablespoon Dijon mustard

  • 2 tablespoons capers, drained and chopped

  • Salt and pepper to taste

  • Fresh parsley, chopped (optional)

Note : for a lighter version, use low-fat mayonnaise or replace some of it with sour cream or Greek yogourt.

Instructions

  1. In a large bowl, combine the julienned celeriac with the lemon juice to prevent browning.

  2. In a separate bowl, mix the mayonnaise, Dijon mustard, and capers.

  3. Add the mayonnaise mixture to the celeriac and toss until well coated.

  4. Season with salt and pepper to taste.

  5. Garnish with chopped parsley if desired.
