Baked celery root and carrot patties are a creative and delicious way to enjoy these root vegetables. The combination of grated celeriac, chopped carrots, and onions creates a texture that's crunchy on the outside and soft on the inside. Perfect as a side dish or aperitif, these patties are easy to prepare and go perfectly with a homemade yogurt sauce. A healthy and tasty dish that will pleasantly surprise your taste buds.
Ingredients
1 large celeriac, peeled and grated
2 medium carrots, peeled and grated
1 onion, finely chopped
2 eggs
3 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon fresh parsley, chopped
2 tablespoons olive oil or other vegetable oil
Instructions
Preheat oven to 200°C (400°F). Cover a baking tray with parchment paper and brush lightly with oil.
In a large bowl, combine the grated celeriac, grated carrots and chopped onion.
Important: squeeze out excess liquid with a paper towel.
Add eggs, flour, salt, pepper and parsley. Mix well until smooth.
Shape the mixture into small patties (approx. 4 cm in diameter and 1 cm thick) and place on the prepared baking sheet.
Lightly brush the tops of the patties with a little oil.
Bake for 12-15 min. Turn over.
Bake for a further 12-15 min. Patties should be golden brown and crisp on both sides.
Serve as a side dish or with yogurt sauce as an aperitif.
