Made with a blend of earthy beets, hearty red beans, and a touch of spice, these burgers are both nutritious and satisfying. Ingredients

  • 240 g of cooked and peeled beets

  • 240 g of cooked and drained red beans

  • 2 cloves of garlic

  • 50 g of oats

  • 1 egg

  • Salt to taste

  • Pepper to taste

  • 1 teaspoon of paprika

  • 1/2 teaspoon of chili powder

  • 1 teaspoon of Herbes de Provence or dried thyme

  • Optional: 25 g of sunflower seeds

Instructions

  1. Preheat your oven to 180°C (350°F).

  2. If not already done, cook the beets and red beans until tender. Drain and let them cool.

  3. In a food processor, combine the cooked beets, red beans, garlic, and oats. Blend until you reach the desired texture; you can leave some chunks if you prefer!

  4. Add the egg to the mixture and blend a bit more to incorporate it well.

  5. If needed, add more oats to thicken the mixture.

  6. Season with salt and pepper to taste. Incorporate the sunflower seeds if you're using them.

  7. Shape the mixture into 6 burger patties.

  8. Place the patties on a baking sheet lined with parchment paper.

  9. Bake for 20 minutes, flipping halfway through. Check for doneness and extend the cooking time if necessary until the burgers are golden and cooked through.


Additional note: No blender? No problem! You can prepare the burgers by hand using a potato masher or a fork for the more adventurous! The texture will be slightly different, but the flavors will be just as delicious.
